Best Friendsgiving Recipe (Hands Down): Corn Fritter Casserole


Our friends Veronica + Shawn are the hostesses with the mostesses when it comes to Friendsgiving.  In fact, 2016 will be their 4th Annual.

We love Friendgiving! Carving out (pun intended) time with friends, laughing, eating + simply enjoying each others company are the makings of the perfect evening.

Back in 2012, I decided to make my mother's favorite Corn Fritter Casserole. And let's just say, its a crowd favorite!

This recipe has been made for generations thanks to Jiffy corn bread mix, but my love for Trader Joe's is strong, so this year, I'm using their mix. 

I can't express how absolutely perfect and easy this recipe is, especially for a potluck. It's basically a sweet and savory corn pudding. Delicious! It can made in advance, reheats great and can be easily doubled for a larger occasion. Oh, and did I mention it's delicious!!

Corn Fritter Casserole




  • 3 tablespoons butter, softened
  • 3 large egg whites
  • 1 (8-ounce) block fat-free cream cheese, softened
  • 1/2 cup finely chopped onion
  • 1/2 cup finely chopped red bell pepper
  • 1 (15 1/4-ounce) can whole-kernel corn, drained
  • 1 (14 3/4-ounce) can cream-style corn
  • 7 1/2-ounces of package corn muffin mix (such as half a box of Trader Joe's Corn Muffin Mix)
  • 1/4 teaspoon black pepper
  • Cooking spray

Preparation

Preheat oven to 375°.

Combine first 3 ingredients in a large bowl, stirring with a whisk until smooth.

Stir in onion, bell pepper, whole-kernel corn, and cream-style corn; mix well.

Add muffin mix and black pepper, stirring until well combined.

Pour into an 11 x 7-inch baking dish coated with cooking spray.

Bake at 375° for 50 minutes or until a wooden pick inserted in center comes out clean.
